My Story
A Canadian chef whose curiosity and passion for food led him to the top kitchens of Canada, United Kingdom, Australia, Hong Kong and currently Dubai.
Inspired by reading the book ‘The Devil in the Kitchen’, Brian took the dive into venturing outside of Canada to answer, what does it take to succeed in the culinary world?

My Approach
I am a well-rounded global citizen who received my foundational Michelin Starred training from Chef Raymond Blanc, one of United Kingdom’s celebrated top chefs, in Le Manoir aux Quat’Saisons. With a strong foundation, I travelled to Australia, working at notable restaurants Mr. Wong, Vue De Monde, Lee Ho Fook and it was in Australia I discovered my love for modern asian cuisine. I further pursued this calling to Hong Kong to work for the award winning Black Sheep Hospitality Group. I am currently based in Dubai, with 2 successful pre openings here and another in the works. I am specializing in restaurant pre-openings and asian cuisine.
I believe my creativity, positivity, adaptability, financial analysis, teamwork management, culinary foresight on latest trends, high standards and diligent work ethic towards new challenges is a welcome addition to any establishment.
